By soaking ground coffee and water in a container overnight and filtering through a thick cotton pad, a concentrate is formed that later can be added to hot or cold water to make individual cups of coffee. When stored in the refrigerator, Toddy has a shelf life of 14 days.  Cold brewing extracts the desirable flavor compounds (and the caffeine) but leaves behind many of the oils and about 67% of the fatty acids that give hot brewed coffee the familiar bite and make it difficult for some people to digest. Coffee made with Toddy concentrate tastes smoother and is easier on the stomach. Makes about 48oz. of coffee concentrate.

This is the home version of the system Intelligentsia uses in all of its retail stores for iced coffee. Package includes: pitcher with lid, brewing filter with handle, cotton filtration pads and instruction booklet.
